Nestled in the heart of the Saïss plain, the Noor Fès olive estate boasts the majesty of its century-old trees. A unique microclimate prevails in this environment, traditionally known for its exceptional fertility. It is particularly conducive to the production of olives from the Moroccan Picholine variety, making the estate’s location ideal.

The carefully planned spacing between the trees in our orchard allows for optimal sunlight exposure to produce the highest quality olives.

Noor Fès is becoming the leader of organic extra virgin olive oil in Morocco thanks to the exceptional quality of its variety which is 100% Moroccan Picholine.

The organoleptic qualities of Noor Fès organic extra virgin olive oil are characterized by its low acidity (less than 0.2%). It contains oleic acid, tocopherol, carotenes, and vitamin E, which have been found to help prevent degenerative diseases. The high quality of the oil is the result of three factors. First, the olives are handpicked, allowing for selecting the best fruits.Second, they are pressed within 4 hours after harvest, preventing mold and fermentation. Third, the extraction and the transformation process take place in an ultramodern and cutting-edge oil mill, resulting in the highest quality extra virgin olive oil.

Noor Fès translates to the “Light of Fès.”

“Light” is not to be translated in the literal sense of the word, but rather to mean the olive oil is “a source of light that enters your body and is really healthy for you.”

The packaging of Noor Fès–available in a variety of sizes and styles–once again captures the concept of light. ‘Noor Fès’ is written in beautifully sweeping golden Arabic calligraphy with a background of a starburst golden mosaic pattern inspired by the style of zellige – the traditional Moroccan mosaic tilework made from individually hand-chiseled pieces. The golden artwork of the packaging symbolizes the essence of the “sun rising on the city of Fès”.
