Pilares Author's Oil is an enterprise by the Méndez León family, who decided to start an organic olive grove project, becoming one of the pioneering farms in Spain.

Our farm is located in the province of Seville, between the towns of Lantejuela and Marchena, in the heart of the countryside.

Since 1996, it has undergone a major transformation from being a calm land farm, where mainly cereals and sunflowers were cultivated, to once again becoming an organic olive grove since its planting.

The philosophy underpinning this project is biodynamic agriculture, as the most conscious and harmonized way to preserve the environment.

This oil is the fruit of careful cultivation; the extraction is carried out cold with freshly harvested olives.

We use traditional methods of oil extraction, prioritizing quality and well-being over productivity and efficiency.

We use local varieties such as Lechín, Manzanilla, Picual, Arbequina, and Verdal, which are better adapted to the ecosystem.
